I’ve been trying to add quinoa into my diet, even though it’s a struggle. I’m trying to be healthy, but GOODNESS the texture of quinoa throws me off. I can’t even do wheat pasta. Fortunately, I’ve been working on a couple of recipes recently that really are quite tasty.
So this recipe was the first one that I’ve tried successfully. The first time I tried to make quinoa was a massive fail because I didn’t rinse the quinoa first. Apparently this is a huge mistake and effects the taste of the quinoa. GOOD. TO. KNOW.
How to Make Quinoa Taco Salad
I setup 1 cup of quinoa with 2 cups of water and 1 boullon cube in the rice cooker and turned it on.
In the meantime, I cooked 1 lb of ground beef and added the taco seasoning. Once it was prepared, I mixed in the cooked quinoa and a bit more water and taco seasoning. Once mixed and cooked thoroughly, I removed from heat. To serve, I added cheese, lettuce and salsa.
As I put the plates in front of everyone, I looked at my husband expectantly to gauge his reaction and he was face pulling a bit (me too) and then he takes a bite and looks up “Oh, it actually tastes like tacos.” Thank. God.
So give it a try, it won’t disappoint. Mix in your favorite taco ingredients.
