Just wanted to quickly share what I’ve got cooking for dinner this week… I decided to try four different Pinterest recipes this week. I’ll update and let you know how they turn out, but I’m pretty excited about them. I was sick last week and lost like 7 lbs in one day so I’ve let my diet go to hell since then… well not completely to hell, but I’m not as much of a stickler about my calories.
Tuesday: Crockpot Beef Stroganoff
Edit: Here’s a couple of pictures of the stroganoff. We substituted fat free cream cheese and sour cream which worked out pretty well. It wasn’t quite as thick as stroganoff often is, as a result, but very tasty. I wish I’d added mushrooms to it though… I forgot them at the store so I just skipped it. Baby G LOVED this… I’ve never seen him attack food this way before.
Wednesday: Loaded Potato and Buffalo Chicken Casserole
Edit: Here’s a picture. It was pretty tasty… we used bacon bits on top.
Update: Daddy B liked the cupcakes and said he could tell once it was pointed out that they were a little different and sweeter. Downfall of the applesauce option was that my cupcakes were so moist that they didn’t stick together very well… they sort of fell apart. Going to have to experiment a bit more.
