We have been so sick… Daddy B and I both got Strep Throat (f this crap, I want my tonsils gone!). Just praying that the breastfeeding helps Baby G avoid catching this because I’m assuming giving an antibiotic to a 17 mo old would be no easy task… 3x a day for 10 days.
Today I didn’t want to eat anything but soup which we’d run out of so Daddy B saved the day by making this soup with just a few ingredients. It’s super yummy!
Boil 8 cups of water. Meanwhile he grilled 1 lb of chicken breast. After water begins to boil, add 8 chicken bouillon cubes and once they dissolve, add the one box of elbow macaroni. Add salt, pepper, garlic powder (approx 1 tsp) and 2 tbsp of olive oil.
Cut up carrots and put into the soup. Boil it all until the macaroni and carrots are cooked. He thinks this took about 10 minutes.
Then he cut up the chicken into small pieces and stirred it into the soup.
At the end he added approximately 1 tbsp of Parsley. He suggested using more water (10 cups) and more carrots than he did, and possibly more bouillon cubes.
It tastes pretty good though and I am psyched to have chicken noodle soup for dinner without a grocery run. Baby G got the noodles and carrots scooped out without the soup broth, which he LOVED. If you’re wondering what he’s doing, he likes to put food in little cups and drink it. That’s his new thing recently.
