I never liked any type of squash, but I decided to finally try some of these spaghetti squash recipes I see floating around on Pinterest all the time. I was so psyched to find that they aren’t bad at all. We are not huge fans of vegetables, especially my husband and of course my two year old.
The first recipe I tried was spaghetti and meatballs with the spaghetti squash being substituted for spaghetti. This recipe is done in the crockpot and is super easy to figure out. Three ingredients and it sits to cook for a few hours so you can go do whatever. I like knowing I can cheat a bit in swapping out a healthier food for an unhealthy one- yay veggies! I also didn’t think I’d like the crunchier texture, but for some reason it really appeals to me. We’ve made it twice and my son, G, says “More spaghetti!” Haha. I tricked him!
I also rinsed my seeds to get the guts off them then left them to dry. We’re going to try planting them. Hope that works out. I probably didn’t investigate enough to figure out how this is done.
