I’ve been trying to make some quinoa recipes as the “word” is that this is healthy and filling. My brother made it for us when we were in Texas and I thought it was decent. I tried making it when we got back, but it was AWFUL. I realized my mistake later- you need to WASH quinoa well before you cook it. Whoops. I have to say it tastes MUCH better now that I know this.
For today’s recipe, I had some leftover rotisserie chicken to use. I cut it up into small pieces to mix in the quinoa. The quinoa was all cooked in the rice cooker- super simple. As with anything that I cook without a recipe, I let my husband try it first. Teeheee…. it was great though! My almost 2 year old AND my husband both liked it. My 4 year old refused to try it because he’s got a strict “no adult food” policy. Alas, can’t please everyone.
- 1 c quinoa, rinsed well
- 3 tbsp of ranch mix
- 2 chicken bouillon cubes
- 2 c water
- Rotisserie chicken: Remove bones, cut the chicken into small pieces
