If you don’t know me outside of this blog and if you didn’t see my post way way back on dieting post partum, I’ve been using MyFitnessPal to track my diet and exercise for almost a year. I’ve met all of my goals for weight loss, although I should be exercising more regularly. I’m currently still tracking because it’s a good routine, I want to maintain my weight loss, and I’d like to continue to be conscious of my calorie, fat, carb, protein, etc. intake. I’m not very good at doing that and MFP has made it a lot easier for me.
Anyhow, I saw this idea on Pinterest, but if I recall correctly it didn’t have a legit link. I tried it anyways. All I did was cook my cauliflower, mash like I would potatoes, and add olive oil, parmesan and romano cheese, and garlic powder. It still tastes like Cauliflower, but it’s not THAT far off from mashed potatoes. I’d be interested to try mixing it with mashed potatoes to make it a slightly healthier option, but to “fill it out a bit.” I might cook it more like I do mashed potatoes next time too…. the garlic powder was a bit much for me. I’ll update if I figure something yummy out!
